Greek Chicken and Rice Bowl Recipe

I received the Uncle Ben’s Flavor infused rice from Influenster for testing purposes but all opinions and recipes are my own. As soon as I received the Chicken and Herbs flavored rice, I knew I had to make a Mediterranean bowl.  I have been making my chicken this way for quiet awhile. The Greek salad on the side is a welcoming fresh element and the homemade tatziki add a bit of creaminess to the dish. You can serve it alone or with pita bread wedges. Best of all you can cut you prep time by more than half by preparing the cucumber salad and marinating your chicken ahead of time. This recipe feeds four people.

Instructions
  1. Tzatziki Sauce Recipe: Peel, de-seed and cut up one cucumber, mix with one cup of Greek yogurt, 2 pressed garlic cloves, and salt and pepper to taste. Cut up mint or dill, add and mix. Place in fridge until ready to plate. You can also substitute with store bought Tzatziki.
  2. Mix 3 cups of greek yogurt, the juice and zest of a lemon, 1 tablespoon of olive oil, 6 pressed cloves of garlic, fresh and dried oregano, paprika and salt and pepper to taste in a bowl. This is the marinade for your chicken. Place the chicken breast in the marinade. Mix until all the chicken is covered in the marinade. Place chicken in a large Ziplock bag, close bag and put in fridge. Chicken must marinade for at least 20 minutes. But you can also marinade overnight or even during your work hours.
  3. For greek salad slice red onions into small pieces and place in ice water for at least 10 minutes. Meanwhile, cut up tomato, cucumber, and feta cheese. Add to a bowl and mix with the juice of 1/2 lemon, white vinegar, and olive oil. Take out onions from ice water and add to the mix. Add salt and pepper to taste depending on how salty your feta cheese is. Place in the fridge. until ready to plate. This can be prepared in advance.
  4. Place 3 tablespoons of olive oil in a large pan. Turn heat to medium high. Wait until oil starts to smoke. Place marinated chicken in the pan without having the chicken breast touch. Wait until chicken browns, about 8 minutes, and flip over. Cover up the pan and cook for an additional 10-15 depending on the thickness of the breast. Turn off heat, flip chicken again, cover again and let the chicken rest for 10 minutes before cutting into strips.
  5. Follow the directions on the back of the Uncle's Bens Flavor Infusions Rice packaging. Once rice is ready, you are ready to plate.
  6. Split rice into 4 bowls. Top with Greek salad, and one sliced up chicken breast each. Place one tablespoon of store bought hummus in each bowl and serve with warm pita bread. Enjoy!
Recipe Notes

If you have Greek salad left over, eat the cucumbers and add the remaining ingredients to omelets in the morning. 🙂
